Recipes – Chocolate Eclair Cake

A while back, a saw a recipe for a Chocolate Eclair Cake in the Mr. Food Newsletter.  The picture looked absolutely mouthwatering, so I decided to check it out.  The recipe is quick and easy to make, only has a few ingredients and you don’t have to bake it. 

All you need is some french vanilla pudding, cool whip, milk, chocolate frosting and graham crackers.  It took me about 10 minutes to mix the filling (milk, pudding, cool whip) and layer it in a 9×13 baking dish with the graham crackers.  Then it took about 5 minutes to get the frosting spread.  It turned out wonderful!  I’ve made it twice already, and plan on making it again for our Christmas Eve get-together with Jason’s side of the family.

    A tip I’ve found useful when making this: microwave the frosting for a bit (15 seconds at a time) until it is very soft. Makes it much easier to spread!
